Infused syrup crab fat
5 oz crab fat (1 jar)
1/2 cup crab fat syrup
Add chilled syrup to crab fat.
Cream with kitchenaid mixer and infuse for a week.
Clarify crab fat and use for sauteing, frying, dressing.
Crab Fat Syrup
1/2 C caster sugar
1/2 C water
5 oz crab fat (1 jar)
6 star anise
Blitz crab fat, sugar and star anise for 10 minutes, cooking it.
Let sit for 30 minutes and strain.
Add water and simmer for 10 minutes.
Reduce to desired consistency.

Blitz shellfish shell into oil and syrup.
