Licorice soup completely kickass. The licorice flavor comes through clearly on the first taste. The soup stands up throughout though. I expected it to be too much after a few bites, but the soup sustained well.
Mango with szechuan peppercorn and lime -- superbly sweet and tasty. Cleared my stuffy nose before I was told the szechuan pepper spray didn't work out. Yay for the power of placebos.
i've had melon + prosciutto for a while back in France, but never really liked the mix of these two flavors. A lot of people seem to really like it though
The firm tofu seemed to soak up more flavor than the extra-firm. Although I think the firm one saturated it a bit too much. I liked the taste of the extra-firm more.
I liked the cake, but especially liked the frosting with the fruit combined. The cake itself seemed like sort of a separate flavor that didn't match as well. Then again, it was a different type cake than I've had. The after-taste was interesting as well.
a lot of the experiments are interesting flavours but not coherent dishes - but the cake is a rally great balance of the succulence of the celery (like carrot cake), the sweetness of the frosting and the thyme fruit, which tastes sweeter on its own - on the cake it was almost savoury. MB
BTW avocado oil isn't going to taste like avocadoes - it's a subtle avo flavour because it's oil
About Tea: In China, when you serve tea, you fill the guest's cup only half. The reason is, he's supposed to taste the tee and ask for more, engaging a conversation with you. If you fill the cup in the first run you say: You can have my tea, but not my hospitality, so drink up and leave. I like tat little protocol and practice it at home. If you are really into tea, you could do, too.
