Dessertifying a Steamed Monkfish Recipe:

* instead of pre-salting ankimo, pre-sugared.

* instead of soaking in sake, soaked in macadamia oil, milk, and godiva chocolate liqueur (17% alc)

* citrus sauce pairing, ginger garnish

* treating ankimo like foie gras

Another idea: been making some sauces for seafood (orange beurre blanc type of stuff), then monte'ing a chunk of ankimo! could do this for a chocolate dessert sauce as well.
