Peeling the pecan's skin removes bitterness (tannins used to protect the fatty pecan meat) and removes the papery delay between popping a pecan in your mouth and feeling the buttery pecan flavor release.

the peeled pecan technique is intense, what a delicacy! really the last thing you want to do is set it atop a pomegranate butter caramel enrobed in 64% chocolate.
